Asafoetida (Ferula assa-foetida) is a stinky resin! That is what Asafoetida means! Asa comes from the word "aza" in Persian, and foetida from the latin - for stinking. The smell and taste do improve upon cooking, losing the stench and beginning to resemble onion. This root has an outstanding reputation for strengthening the digestive system. Asafoetida has a reputation as a stimulant, a laxative, a cleanser, and as an herb that can expel gas from the intestines.
